Larb Taco Recipe

Just trust me on this one. I've cooked this so many times that I've taken the best parts of my two fav recipes and created my own Larb perfection. Perfect for hot days or easy meal to make when you have a bunch of people over and want to appear fancy.
Set up
- Fresh basil leaves
- Fresh cilantro leaves
- Fresh mint leaves
- 2 heads lettuce
- Steamed white or jasmine rice
- lime wedges
- 1 cucumber halved lengthwise thinly sliced
- 1/4 cup fresh lime juice
Pork Filling
1 lb extra lean ground pork
1 shallot, thinly sliced
- 2 red or green Thai chilies
- 3 tablespoons vegetable oil
- 6 garlic cloves, thinly sliced
- black pepper
- 1/4 cup chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 2 teaspoons brown sugar
Dressing
- 1/3 c fresh lime juice
- 2 tablespoons fish sauce
- 2 tablespoons light brown sugar
- 1 teaspoon Sriracha sauce
Toss cucumber, 1/4 chile, 1/4 c lime juice in a bowl, season with salt and set aside. Mix together dressing ingredients and set aside. Cook rice according to package directions. Heat oil in a large skillet over high heat. Add garlic, shallot and remaining chile and cook, stirring, until garlic is just beginning to turn golden. Add pork, season with salt and pepper, and cooke, breaking up with a spoon and pressing down firmly to help brown. Cook for 6-8 minute or until the pork is browned and crisp in spots. Add broth, soy sauce, fish sauce, and brown sugar and cook, scraping up any brown bits from the bottom of skillet until liquid is almost completely evaporated, about 2 minutes. Turn heat off and pour dressing over the cooked pork and let sit. Wash and dry the herbs and lettuce and set out in bowls or on a platter. Put rice and pork in bowls and bring to the table. Use the washed lettuce as a taco shell and fill with rice, pork, herbs and cucumber. If you are feeling ambitious, make one of these quick recipes to add to your larb taco!
